Chef Marcus Fair, an Atlanta, Georgia native, infuses a southern touch into his culinary creations inspired by cherished memories of his Mother’s & Grandmother’s cooking during his childhood years. Though Marcus grew up with a deep love for food, cultural norms discouraged him from cooking as he understood that a “Man’s Place” was not in the kitchen. Breaking through gender roles, Chef Fair’s culinary journey began with his grandfather teaching him practical skills such as how to catch, clean, and pluck feathers from a chicken.
He also learned lessons on descaling, cleaning and dressing fish. Marcus’s first cooking memory traces back to a spaghetti cookoff at a friend’s house when he was just 12 years old.
In 2012, Marcus embarked on his culinary journey, starting as a prep cook at a local restaurant in the Atlanta area. From 2012 to 2021, Marcus continued to work in the food service industry and mastered his skills in cooking, food preparation and safety, and restaurant management.
Mr. Fair Joined Occasional Occasions by Carlton in 2021 amid the pandemic. Chef initially assisted with kitchen prep on an as-needed basis. Within a year, his dedication and exceptional work ethic led to a salaried position.
Marcus’s hard work and dedication to the Occasional Occasions’ catering brand does not go unnoticed. His continued display of commitment is evidenced by his professional and personal development initiatives. Chef’s passion to expand the knowledge and skillset of his craft is displayed through his enthusiasm to constantly learn new techniques and culinary art forms.
Marcus exclaims that working with Occasional Occasions has helped him to find joy in bringing someone’s culinary vision to life and seeing the look of delight on a client’s face is a rewarding result.
Chef expressed his definition of success as, “Consistently putting my best foot forward to give my best effort to excel in everything that I do.” Chef stated that his love for cooking stems from a desire to help people.
Marcus goes on to share that his greatest inspiration comes from his four children – two boys and two girls, aged 12, 11, 5, and 4. Marcus stated, “I aim to instill in them the values of perseverance and striving for excellence by leading by example in every aspect of my life.”
What’s next for Sous Chef Marcus Fair? “On a professional level, I aspire to delve into Asian-influenced cuisine, embracing continuous learning and furthering personal and career growth. I am considering a public speaking class to enhance confidence in professional and personal interactions. I am committed to working harder to provide an improved life for my family.”
